Aioli Dip

This is a great dip for french fries!! (short and sweet mix too)

8 minced garlic cloves
pinch salt
2 cups light mayonnaise
2 tbsp. lemon juice



In a small bowl, combine garlic and a pinch of salt. Using the back of a spoon, scrape and press garlic against sides of bowl to make a smooth paste.
Add remaining ingredients and whisk together until combined. Wrap, refrigerate 30 minutes.

not so boring leftovers!

 

Using the remaining 1/2 pork loin from our last recipe I made yummolicious enchilladas! 



Stir together 1 can cream of mushroom soup, 3/4c sour cream, ¾c milk, 1T garlic, 1T ginger, 1T onion powder

Combine shredded pork with 10oz thawed spinach

Add together ¾ the cream mixture to the pork
(I also used left over corn I had sautéed the night before, and ½ can roasted tomatoes with onion, celery)

Stuff into tortillas, top with cheese then roll up and place, seem down in baking dish. 

Smother with remaining cream sauce 

Bake at 350 for 30 minutes

Add cheese on top and bake for 15 more minutes
Serve and ENJOY!



Easy Pork Loin


Thaw pork loin (I usually thaw in hot water)
Trim of excess fat, trust me it’s worth it!

Drizzle EVOO on it and smother in salt, pepper, cumin garlic powder, oregano, sage.
(i also used a grill mates type seasoning that works great!)
Bake at 325 for 45 minutes. Let rest.

Sauce options
Teriyaki
Sweet and Sour

Sweet and Sour Sauce

Start with basics
1 TBS minced Garlic + 1 TBS Ginger (basics on everything asian)

Add
2 TBS soy sauce
3-4 TBS Ketchup
Ketchup changes it from an asian sauce to sweet and sour.
    two parts ketchup to everything else

optional:
1/2 tsp dijon mustard (Do not over do it!)
1 TBS worcestshire sauce
1 TBS Teriyaki
